Formula and worked example
Ingredient percentage = ingredient weight ÷ total flour weight × 100. Total flour is 100%. All mass units normalize to grams. Water-labeled rows provide hydration as a secondary result.
With 500 g flour, 350 g water, and 10 g salt, water is 70%, salt is 2%, total formula is 172%, and dough weight is 860 g.
Assumptions and limits
This tool does not recommend an ideal dough formula. Dough Hydration is retained as a secondary result rather than split into a duplicate canonical.
