Method

Total dough equals ball count × ball weight. Flour equals total dough divided by 1 + hydration + salt + yeast + oil, with every percentage expressed relative to flour.

Worked example

Four 250 g balls at 65% hydration, 2.5% salt, 0.5% yeast, and 2% oil require about 588.235 g flour.
